Made from the raw milk of the red and white cattle of the Comte region in France. The cheese is encircled by a strip of bark which imparts a delicate resinous aroma into the cheese. The paste becomes almost liquid when it is at its peak and has to be spooned.

Also delicious baked and eaten as a fondue.
