This traditional Swiss cheese has a mild, nutty flavour. The curds are cooked in the whey, drained, pressed and matured for at least six months during which time the famous holes appear, evenly distributed throughout the dense, golden paste. Delicious eaten on a cheese board or melted in fondues.
