From the South-East of Spain, this hard pressed goat's milk cheese, although firm, has a creamy bite. The paste is an intense white colour which is contrasted by the purple rind, which has been dipped in red wine. When eating the cheese it is advisable to eat the rind too to enjoy the winey after taste.
