From the village of the same name, Morbier can be distinguished from a Raclette by its horizontal line of vegetable dye in the middle of the cheese. Ash used to be used instead of the dye to separate the morning and the evening milk. Its flavour is milder yet one can detect a tangy touch at the end. A delicious alternative to melt on a raclette machine.
