HOW TO FILLET A FISH?
1. Lay the fish on the cutting board with the back of fish closest to you (belly of fish facing away)
2. Make vertical cut just behind the gill plate until you feel the blade hit the back bone
3. As you hold the head, turn the blade towards the tail, and cut horizontally along the back bone until you reach the tail. Cut the fillet free of the fish
4. Flip fish over with back bone facing away from you, and repeat steps 2 and 3
5. Lay fillet skin side down with the tail closest, and head end facing away from you
6. Cutting away from you (tail end to head end), run the knife lightly above the skin so as to remove the meat from the skin
