Coq au Vin de Domme: 2/3 persons or 4/5 persons.
Corn fed rooster cooked slowly with lots of hearty ingredients and a rich local red wine.
Chef's advice:
Place the jar in a Bain-Marie without removing the lid nor the cap untill the content get very hot.
In the meantime, steam a few potatoes and servethem with the hot coq au vin,
Do not wait...you'll appreciate it more when pipping hot!!
